Leftover Roast Fajitas


Contains:  One flour tortilla stuffed with warmed leftover roast beef, sour cream, chopped avocados, minced onion and coarsely diced tomato.

Hubster doesn't like spicy foods, so I left off the salsa.  If you like that salsa that doesn't come from New Jersey, try this recipe:

Isela's Easy Salsa:

Whirl one jalapeno and one small white onion in a food processor or blender til well chopped.  Add the juice and half the tomatoes in one 15 ounce can of tomatoes, and process.  

Important:  Since it's hard to gauge a jalapeno's heat, taste your salsa NOW.  If you need to add another jalapeno, add it now.  If you like cilantro, toss in a tablespoon now and whirl.  If you want garlic, add one clove.  Process.

When your ingredients are mixed, add in the remainder of the tomatoes and pulse til you have a medium texture.  Voila-2 cups of salsa!
